Here's a helpful visual for roasting veggies! If you notice, it also has recommendations for specific spicesš§to use. Cooking veggies for a bit and adding spices really ups the flavor profile. š Also, lightly cooking veggies helps them to digest easier; if you notice discomfort and bloating after eating raw veggies, then roasting or steaming them before you eat them may help with this.

On a side note, bell peppers š«, tomatoes š , and butternut squash are botanically considered fruits, though, from a culinary perspective šØāš³ they are treated as veggies.
