The Best Dairy-Free Mashed Potatoes

Mashed potatoes are definitely a holiday favorite! Here is a recipe using some of the swaps I shared☺️

The Best Dairy Free Mashed Potatoes

Ingredients:

3 pounds potatoes, peeled and cubed

4 garlic cloves, peeled (2 teaspoons minced)

1 teaspoon coarse salt

½ cup unsweetened dairy free milk (I like cashew)

½ cup unsweetened plain coconut yogurt or canned coconut milk

4-6 tablespoons of vegan butter

Salt and pepper to taste

Chopped fresh chives if you like

Directions:

Prepare just as you would your usual mashed potatoes using the ingredients above

Let me know if you have any questions!! One great thing about these potatoes is they are wonderful even left over!! They don’t dry out in the fridge😊
