The Best Dairy Free Mashed Potatoes
Ingredients:
3 pounds potatoes, peeled and cubed
4 garlic cloves, peeled (2 teaspoons minced)
1 teaspoon coarse salt
½ cup unsweetened dairy free milk (I like cashew)
½ cup unsweetened plain coconut yogurt or canned coconut milk
4-6 tablespoons of vegan butter
Salt and pepper to taste
Chopped fresh chives if you like
Directions:
Prepare just as you would your usual mashed potatoes using the ingredients above
